Full of chocolate enjoyment, but with little sugar – that's possible. A fudge is usually a sticky and very sweet affair. In this recipe, we don't do without taste, but mostly without sugar.
The basis for this recipe is the Verival Sport Protein Porridge cocoa banana with healthy cocoa. Thus, this treat does not require any industrial sugar. Of course, this fudge also works as a healthy breakfast during the Christmas period 😉
Why is this fudge healthy?

You only need a few ingredients to prepare the vegan chocolate fudge. But these ingredients are rich in vitamins and fiber. In addition to our porridge, coconut oil and agave syrup and apricots, cocoa, hazelnuts and pumpkin seeds also play an important role:

Hazelnuts are full of vitamin E , which mainly has an antioxidant effect in the body, but also features anti-inflammatory and immune-supporting properties. The minerals calcium and phosphorus in them help strengthen our bones and ensure healthy teeth. The increased iron content is also a notable asset of this nut.
Protein Hero Pumpkin Seeds
Pumpkin seeds also excel in terms of iron . They are rich in other essential nutrients such as zinc, magnesium, and selenium and thus positively affect our heart health and blood sugar levels. That's why they're also a popular topping for cereals and porridge.
What do I have to consider when preparing the fudge?
It is important that you plan some time before you can enjoy the fudge. The confection must be refrigerated for at least 2 hours before consumption. This allows the ingredients to combine well, resulting in the correct consistency. It is essential to always store the fudge in a cool place; otherwise, it will become too soft. It keeps in a tight-fitting container and with baking paper between layers for about two weeks.

Healthy chocolate fudge with cereal crumbs
Ingredients
For the cereal crumbs
- 2 tbsp Sport Protein Porridge Cocoa Banana
- 1 1/2 tbsp pumpkin seeds
- 1 tbsp whole unpeeled hazelnuts
For the Chocolate Blend
- 50 g raw cocoa powder
- 80 g virgin coconut oil
- 1 tbsp whole unpeeled hazelnuts
- 30 g sports protein porridge cocoa banana
- 1 tsp cinnamon
- 80 g agave syrup
- 50 g dried unsulphured apricots
- 1 pinch of salt
- possibly cocoa powder for dusting
Preparation
For the sprinkles

Chop pumpkin seeds and hazelnuts medium-fine with a knife.

Mix with the porridge.

Lightly fry together in a pan without fat.

Remove from the pan and set aside.
For the Chocolate Blend

Finely chop cocoa powder, coconut oil, hazelnuts, porridge, cinnamon, agave syrup, apricots, and salt in a powerful blender for about 4-5 minutes until a very fine puree is formed. It is important that the mixture is pureed for a long time. Only then will all the ingredients combine well, resulting in a homogeneous chocolate mass.

Lightly moisten a small baking or casserole dish (about 15 cm side length) and line it with cling film.

Distribute approximately 3/4 of the sprinkles on the bottom of the mold. Place the chocolate mixture on top and smooth it with a knife. Spread the remaining sprinkles on top and press lightly.

Place the mold, covered, in the refrigerator for at least 2 hours.

Remove the chocolate plate from the mold and transfer it onto a cutting board.

Remove the film. If possible, do not tip the mass so that the sprinkle surface does not break.

Using a sharp knife, cut the chocolate plate into small squares (side length approximately 2.5 cm).

If you wish, you can sprinkle the fudge with cocoa powder.

Always store the confectionery in a cool place; otherwise, it will become too soft.
